Tasting Notes

NOVA

A Swiss-style washed curd cheese.

Each wheel is individually hand salted and briefly aged to produce a fresh, smooth and light eating cheese.

TAIT

Totally unique made nowhere else.

Tait is a washed curd cheese with a white-mould rind and a smooth textured Swiss-style centre.

THULIMBAH

Smooth, buttery, hard cheese with a distinctive tangy aftertaste.

It is a washed curd cheese - meaning whey is drained from the curd and warm water is introduced to the vat and the curds are polished, producing a very smooth texture.

STANTHORPE MATURED

Rich and creamy Cheddar-style cheese with a full bodied mouth feel.

Our cheddaring process produces both acidity and crumble. But it is the lingering creaminess and tendency to melt on the tongue which gives Stanthorpe Matured its distinctiveness.

SNOWFLAKE

Creamy white-mould surface ripened cheese in the Brie-Camembert family, with a lovely mushroom flavour to it.

The older the cheese gets the more liquid the centre will become. If you like it firmer, eat now- if you like it oozing, age it for another couple of weeks up to a month in your fridge.

GRANITE GOLD

Looking like the granite rocks of our region, this is a hard, tangy Romano-style cheese.

Delicately veined with ash, it is rich and
creamy with a hint of crumble. Another hot processed cheese, it melts well when used in cooking.

PEPPER

Rich, crumbly and spicy with whole Australian grown peppercorns spread throughout.

Whole peppercorns are softened in hot water before adding to the curd at hooping time. Great for your cheeseboards and wonderful to cook with.

OUTLAW

Smoked, hard cheese in the Romano family.

It packs a punch with robust hickory smoke, BBQ flavour and a firm bodied cheese with a hint of crumbliness. Another hot processed cheese it melts well when used in cooking.

CHILLI

Chilli is a fresh young and spicy cheese in the Romano Family.

The gentle punch of chilli is balanced by a tangy sweetness and creamy mouth feel. A hot processed cheese, use it in dishes to add a delicious molten kick of heat.

RUBY

Ruby is a smooth, bold and tangy washed curd cheese delicately infused with red wine.

It stands out on your cheese platter looking vibrant and inviting with visually exciting red veins. It pairs well with sweet pastes and fruit.

BLUE LAGOON

A medium to soft, creamy, salty, brie-style blue.

The blue only grow on the outer rind and the milder creamy centre makes this a good introduction to blue cheese beginners. Pairs well with sweet accompaniments and dry white wines.

BRASS MONKEY BLUE

Is a soft, creamy, salty, sweet and beautifully balanced blue vein.

Surprisingly mild in taste it's a great place to start if you are wary of blue cheeses. Pairs well with sweet accompaniments and sweet wines.
